The grapes were hand-picked in small crates and cooled down to 1ºC before a gentle, whole-bunch pressing with total focus on maintaining fruit purity and delicate aromatics. Only the finest heart of the press juice was used for this noble MCC. Settled for two nights. Fermentation in stainless steel took place at approximately 12ºC, relying solely on naturally present, wild yeasts. After fermentation the base wine was kept on the gross lees for six months. The wine was then bottled for secondary fermentation and aged two years on the lees in the bottle, before it was riddled, disgorged and finally bottled.

Single vineyard – The Waterford range is well known for terroir specific wines. In this case the Pinot Noir is carefully sourced from a single vineyard in Elgin, the best suited terroir for the growth of Pinot Noir, with a slightly cooler climate than Stellenbosch. Once the grapes are harvested, they are transported to Waterford Estate for vinification. A very natural approach is followed in order to best express the characteristics of the surroundings of the vineyards. When compared to previous vintages, the 2017 Pinot Noir vintage has a modern edge. The drought meant that the winemaking team had more control over the growth and ripening of the vineyards, helping them to produce a fresher wine. -

Waterford MCC is made in the truly patient traditional style, focusing on secondary characteristics from bottle fermenting and ageing. The 2009 vintage has classic brioche yeasty notes but surprisingly fruity for being aged on the lees for 7 years, and 1 year under cork prior to release. 2009 vintage has a sturdy freshness and adds great longevity to the wine. The palate is lined with extra fine bubbles and carries a long aftertaste. This brings about a crisp yet rich, creamy and focused mousse.

A singular wine produced from a special and unique vineyard on the Waterford Estate property. Vines were planted in 1988 making it one of the oldest Chardonnay vineyards in the country. This Chardonnay vineyard was registered as a single vineyard in 2012, which ensures that the traceability of the wine produced exclusively to the original 5.8-hectare block. Soils are comprised of red clay (Hutton) as well as large granite deposits and parent material found throughout the clay profile. The clay adds structure to the wine, while the granite produces great minerality and finesse to the overall presentation. -

Each year’s blend differs as a function of climate and available Cape Winelands grapes. And for 2011, it was the turn of Merlot to shine. This resulted in a rich, robust wine that impresses with dense, intense fruity flavours and pairs well with savoury dishes, particularly red meat.
The wine boasts a powerful tannic structure, with a bone-dry finish that is underpinned by a generous black plum taste and aftertaste. The nose shows red and black fruit, a subtle leafiness and oyster shell. The palate is medium- to full-bodied with fresh acidity and sleek tannins.

Fruit sourced from Elgin with Bokkeveld Shale soils that are 70% gravel. Wine did not go through malolactic fermentation so as to maintain minerality and freshness but has 10 month lees contact, with regular battonage, giving it a round mouth feel despite the minerality. Maturation was 23% New French Oak Barrel, 52% Second fill barrels and balance split between Noblot and Foudre. The wine is more in the Burgundian style with minerality, long in the mouth and complex. An Elegant chardonnay.
